Flavor of the Month Summary: Rosemary

Well another Flavor of the Month has ended.  What do you guys think of this format?  I had a blast playing with rosemary this month and learned a few things:

  • It is a wonderful complement to stone fruits like peach and plums
  • Citrus is the perfect pairing with rosemary, especially lemon
  • A good quality dried rosemary works well if it’s in powder form
  • Steaming with rosemary really imparts that flavor on other foods
  • Steeping rosemary in liquids takes more than you would think to impart the flavor.

Now here is a rundown of all the things I made this month that featured rosemary.

Grapefruit Rosemary Refresher – This cocktail was a great way to start off the month or rosemary!  The slightly bitter flavor of grapefruit worked beautifully with the woodsy taste of rosemary.  It’s also where you’ll find my rosemary simple syrup recipe.

 

Upside Down Rhubarb and Rosemary Cake -A sticky and moist cake and the tartness of the rhubarb brings out the lovely pine flavor of the rosemary.  It’s sure to be a real crowd pleaser at your next picnic or BBQ!

 

Peach and Rosemary Slushy – The first of many boozy slushies to come in the future. This slushy is easy to make, fun to drink and pairs the unexpected combo of peach and rosemary.

 

Farro Salad with Mozzarella and Sun-dried Tomatoes – While Italian flavors may be expected when it comes to rosemary, this salad helps show why!  The creamy and soft mozzarella adds a nice texture to the nutty faro and savory tomatoes.  It’s all tied together with a balsamic vinaigrette featuring rosemary.

 

Rosemary Shortbread – I think this may have been my favorite dessert to come of out all these rosemary experiments.  The shortbread is butterY but still light and crisp and really highlights the rosemary.  Not to mention, it’s only 4 ingredients!

 

Rosemary Steamed Halibut – This is the rosemary recipe I am most proud of.  Steaming with rosemary was a fun new way to really get that rosemary essence into a food and the fish is super flavorful!

 

Lemon Rosemary Ice Cream – A rich and creamy ice cream flavored with another citrus/rosemary combo. This ice cream would be great served with the rosemary shortbread or gingersnaps.

 

Boozy Rosemary Limeade – Tart limeade with a hint of rosemary, this will become your favorite drink for the summer! It’s also easy to make and is almost as tasty (almost) without the booze, which makes it a great option for parties.
