Flavor of the Month Summary: Twofers!
Well it’s been a whirlwind of a month! Our daughter turned 2, Derek turned 40, we entertained a bunch and got a new dog, I am pooped, but am glad I had these twofer recipes to help make things a little easier. I hope you all got a chance to try some of them. For the rundown, I’m doing things a little differently this time by grouping together each coupling under a heading. Here we go!
Seasoned Skirt Steak and Corn Tortillas:
Beef Fajitas – Skirt steak is cooked in some great seasoning with onion and bell peppers for a great dinner!
Beef Breakfast Tostadas – These tostadas are really one of my favorite leftover ideas yet! The leftover fajita meat is reheated with scrambled eggs and some cheese and served on top of a crispy fried corn tortillas. So yummy! This recipe would also work well with taco meat I bet!
Lemon Marmalade:
Lemon Almond Coffee Cake – This coffee cake is great for so many reasons. It has an amazing lemon flavor from the marmalade and a wonderful crumble on top. The marmalade also adds extra moistness and keeps this coffee cake fresh for days!
Lemon Soy Pork Tenderloin – You all know how much I love combining fruity flavors with meats so it’s no surprise I came up with a way to do that using lemon marmalade. Pork Tenderloin is topped with a sauce combining lemon marmalade, soy, and a few other ingredients for a really great sauce. The marmalade adds a touch of sweetness but the lemon retains its tanginess so it’s not too sweet.
London Broil & Caramelized Onion Butter:
London Broil with Caramelized Onion Butter – London Broil is definitely the unsung hero of the beef world! It’s usually fairly inexpensive, cooks quickly, and takes on marinated beautifully! It’s definitely going to be a staple for us, especially during grilling season! This recipe calls for a simple Worcestershire sauce marinade and the highlight is the home madecaramelized onion compound butter as a sauce for the top. So yummy!
Mushroom Cheesesteaks – The leftover London Broil gets added to sautéed mushrooms and onions and a gooey cheese sauce is added. It all gets put it onto toasted rolls spread with that wonderful caramelized onion butter. I cannot wait to make this one again!
