Carrot Ginger Smoothie
I told myself I would make at least one beverage using carrots for this Flavor of the Month, I figured it would be such a beautiful color. A smoothie seemed like the best (nonalcoholic) way to go. I decided to keep it very simple with no dairy so the carrot could really shine. I realized I am not sure what the strict definition of a “smoothie” is. In my head it normally includes yogurt, soy milk, or some other creamy element. Is a drink without those elements still a smoothie? Oh well, who knows.
Let’s get to it.
In a blender, add the ice, carrots, apple cider, lime juice and ginger.
If you want a drink with more kick (a.k.a. spice), increase the amount of ginger you use. As you all know, I am a big wimp when it comes to spice so this recipe only has a little fresh ginger. Pop the top on and blend until everything is combined and smooth. Give it a taste. Add honey if you want more sweetness. You may not need any depending on how sweet your carrots are, so just add a little at a time and blend it in.
I really love all the flavors in this drink. The carrot really shines and the ginger adds a teensy bit of warmth. The zesty lime just rounds everything out.

- 1 cup ice
- 2 carrots, peeled and cut into chunks
- 1/4 teaspoon freshly ground ginger
- 1/4 cup apple cider
- juice of half a lime
- honey to taste
