Don't Judge Me Mondays: Coconut Mojito
Man it has been HOT here in the Pacific Northwest! And when I say “hot”, for us that means in the 90s. I know most of you in other areas are experiencing much worse heat, but for me when the 90s hit, I feel like I’m going to melt (in other words, I’m a Weather Wimp). Needless to say, I wanted to make a drink today that was refreshing and required a small amount of effort. We have mint in the garden that I’ve been meaning to use and we all know now much I love coconut, so a Mojito seemed like the perfect choice!
Let’s Mojito!
Start by filling a fun 8 ounce glass about 1/3 full with ice, the lime juice and the fresh mint leaves. Now muddle this for about 1 minute, or until you can start to smell the mint. The muddling is helping the mint leaves release their oils, which will make our mojito perfectly minty.
Then add a a few more ice cubes to the glass and pour in the rum. I tried this drink with spiced rum or coconut and I liked the coconut better. If you’re worried about coconut overload, feel free to use spiced rum. Now pour in the coconut water and stir.
Garnish with a lime wedge, mint leaf (or both!) and enjoy.
So refreshing!
