Grilled Balsamic Grape Pork Tenderloin

Happy 4th of July!  If there’s one holiday made for grilling, this is it!  I love pairing meats with fruit this time of year since there’s so much great produce and doing it all on a grill means you don’t have to turn the hot oven on in the house! Today I am sharing a recipe that is easy to make and also easy to double or triple for a crowd.  The most expensive component of this is the pork tenderloin, but we get it in four packs at Costco for a great deal.  You can just freeze what you’re not going to cook.

Let’s get to it!

Start by turning your grill to medium heat. Now season your pork tenderloin with salt and pepper.  I have one of these wonderful clay dishes that is oven and grill-proof.  If you don’t have a dish that’s grill-proof, you can make one using heavy duty foil.  Just make sure it has sides high enough to keep in liquids.

Now put the grapes in a medium bowl and add the balsamic, onion, olive oil, and salt.  If your grapes are large, cut them in half.

Stir that all together and pour it over the pork.

Pop the whole thing onto your heated grill. Put the lid on and cook for twenty to twenty-five minutes, occasionally stirring the onion grape mixture.  Take it off the grill when the pork reaches 145°. Let the pork rest at least five minutes.  This ensures all the juices don’t run out, keeping the pork moist and juicy.

When you’re ready to serve, slice the pork and spoon the grape and onion mixture over it.  The grapes and onions soften up and they meld with the juices of the pork to make a really tasty sauce that’s savory and sweet.

Ingredients

  • 1 medium sized pork tenderloin
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups red grapes
  • 1/2 large sweet onion, cut into half moons

Instructions

  1. Preheat grill to medium.
  2. Season pork tenderloin with salt and pepper.
  3. Stir together grapes, balsamic, onion, olive oil, and salt in a medium bowl.  
  4. Pour over the pork and put onto heated grill.
  5. Put lid on the grill and cook 20-25 minutes, occasionally stirring the onion grape mixture.  
  6. Take off the grill when the pork is 145°.
  7. Rest the pork at least 5 minutes.  
  8. Slice the pork and spoon the grape and onion mixture over it.
