Don’t Judge Me Mondays: Christmas Mimosa

Merry Christmas everyone!  I hope you all have a fun holiday with friends and loved ones.

Today I am sharing a mimosa recipe.  It’s great whether you want to serve it at Christmas brunch, sipping while opening gifts, or have it as a light cocktail with your Christmas ham. It’s also a fairly simple cocktail….holidays can be stressful enough, especially if you’re entertaining so I figured we all deserved something that can be thrown together quickly!

Let’s get to it!

In each of your Champagne or wine glasses, pour four ounces of the Champagne or Prosecco. Either will work, you’re just looking for a dry sparkling wine.  The beauty of this drink is that it’s crisp and not too sweet, so you don’t want to use a dessert or super sweet sparkling wine like Moscato. If you have some festive glasses to use, even better!  My friend Emily gave me these pretty gold ones that I’ve already used several times (thanks Emily!).

Now pour grapefruit and cranberry juice into each of the glasses.

Top off with the rest of the Champagne and garnish with a grapefruit slice or candied cranberry.

If you want to put some of this together ahead of time, you can make a batch of the grapefruit and cranberry juices and chill in the fridge.  When ready to serve, let your guest pour the juices in the glasses and top off with the Champagne.

This mimosa is light and crisp with a little bit of sweetness from the cranberry juice.  I also like the little pop of color the cranberry juice adds.

This recipe makes 2 cocktails.

Ingredients

  • 10 ounces Champagne or Prosecco divided
  • 4 ounces freshly squeezed grapefruit juice
  • 4 ounces cranberry juice
  • small grapefruit wedges or sugared cranberries for garnish

Instructions

  1. Pour 4 ounces of Champagne or Prosecco into each glass. 
  2. Add grapefruit and cranberry juice.  Top off with remaining Champagne or Prosecco.
  3. Garnish with a grapefruit slice or candied cranberry.
