Peach and Onion Chicken

This recipe is one I’ve been making for several years and it’s always delicious.  It’s perfect for spring, as the weather gets warmer and more fresh fruit becomes available.  Of course, it’s also a great excuse to get out the grill!

First, you’ll need to make the marinade.  Whisk together the soy sauce, sesame oil, honey and ground ginger.  Put the chicken in a bowl or Ziploc bag and pour in the marinade.  Put that it in the fridge to marinate for an hour. If using a bowl, make sure to cover it with plastic wrap.  I would also not recommend marinating the chicken for more than an hour.  Soy sauce permeates meat quickly so if you leave it too long, the chicken will get way too salty.

Preheat the grill to medium-high and close the lid.

We have a ceramic dish we bought last year at a local Farmer’s Market and one of the things I love about it is that it can be used on the grill.  If you don’t have one of these, just use another dish that is safe for the grill.  You can also make your own disposable “dish” using doubled up foil that is made into a container of sorts.  Just make sure it has walls to hold in the juices.

Take your chicken out of the marinade and put it into the dish you’ve chosen. Don’t toss the marinade, though.   We’ll get to that in a sec.

Put the sliced onion and peaches on top of the chicken.  I used fresh peaches that I peeled, but nectarine would also be great in this recipe.  If using nectarines, you probably wouldn’t need to peel them either. Top all of that with the leftover marinade.  This will thicken slightly and be flavored by the chicken, onion and peaches to make a great sauce to top your chicken with!

Turn the grill down to medium and put the dish of chicken on.  Cover the grill and let it cook for 25 minutes.  Halfway through, lift the lid and baste the chicken with the sauce.

The chicken is done when its internal temperature has reached 160°.

Take off the grill and serve the chicken breast topped with the onion and peach mixture and some sauce.  Honestly, the sauce is the best part of this whole dish!

I would recommend pairing this dish with some brown rice, a salad, or some grilled veggies.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2/3 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1 tablespoon sesame oil

  • 1 1/2 cups sliced and peeled fresh peaches (about 3 small peaches, sliced into 8ths)
  • 1/2 sweet or yellow onion cut into half moons

Instructions

  3. Preheat the grill to medium-high and close the lid.
  4. Take chicken out of the marinade and put it into the dish you've chosen.
  5. Top with the sliced onion, peaches, and leftover marinade.
  6. Turn the grill down to medium and put the dish of chicken on. Cover the grill and let it cook for 25 minutes. Halfway through, lift the lid and baste the chicken with the sauce.
  7. The chicken is done when it has reached an internal temperature of 160°.
  8. Take off the grill and serve the chicken breast topped with the onion and peach mixture and some sauce.
