Blueberry Peanut Butter Smoothie

One of the perks of taking this time off is that I have more freedom in the mornings for breakfast.  It’s been fun taking the time for that extra cup of coffee or making something extra special that I would have only made on a lazy Sunday morning when I was working.  It also means that I’ve had time to mix it up and think more about what I want to have. This smoothie came about because I wanted something with blueberries, but not baked.  Something with yogurt seemed like a good way to go because it would fill me up.

I like this smoothie as a portable breakfast option, so I can bring it with me while I run errands or sit at the library.  I just have to take a quick detour and say that I’ve really enjoyed exploring my local libraries.  I am kicking myself now for taking so long to get my library card as an adult (and non-student).  The King County Library System has a great app that I love using, I can add books to put on hold or add to my “read later” shelf.  Every time I step into the library I get a little thrill thinking about what new discoveries I’ll make.  I always check out the recommendations shelf and the cookbooks section.  I don’t know why it never occurred to me before to check out cookbooks at the library to take them for a spin.  We recently purged a bunch of our cookbooks because we weren’t using them, they were either too specialized or the recipes just weren’t written well.  Checking out a cookbook at the library is a great way to try it out to determine if it’s one you want to permanently add to your cookbook collection. If you haven’t done so recently get a library card and check out your local libraries. They really are a thing of wonder!

Ok, back to the smoothie!

Add the Greek yogurt, blueberries, peanut butter, and cinnamon to your blender.  I use plain Greek yogurt because it has more protein and is a blank canvas, so it’s easier to control the flavor of my smoothie.   I also use frozen blueberries so that I don’t have to use ice and dilute the flavors.

Now blend until it’s smooth.

Taste and decide if any honey is needed, depending on your blueberries after blending it could range from pleasantly sweet to uncomfortably tart.

Pour into your favorite cup and go about your day.  This smoothie is satisfying, tasty and filling because it has two forms of protein in it from the yogurt and peanut butter.  It might sound like a strange combo to add peanut butter in with blueberries but just think of it as another form of peanut butter and jelly. 😉

My friend Betsy gave me a hack for cleaning the blender that I want to share.  That’s always been the main deterrent for me in making smoothies, I have to clean the blender right away or it will be a pain to clean all that stickiness out.  Betsy’s hack is to add warm water and dish soap to your blender once you pour out your drink. “Blend” the water and soap until it starts to froth.  Let it sit if don’t have time to finish it right then, or rinse it out and let it dry.  So simple!

Blueberry Peanut Butter Smoothie

Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 cup frozen blueberries
  • 1 tablespoon peanut butter
  • pinch of cinnamon
  • 1 tablespoon honey (optional)

Instructions

  1. Add Greek yogurt, blueberries, cinnamon and peanut butter to blender.
  2. Blend until smooth.
  3. Taste for sweetness and add honey if desired.
