Tater Tot Waffle Breakfast

A few weeks ago on a Sunday morning, I woke up with a serious hankering for hash browns but I also didn’t really feel like going out for breakfast. Luckily, we had some tater tots in the freezer so I started brainstorming how to make this into a Sunday breakfast for Derek and I.  I remembered seeing on one of my favorite blogs, using a waffle iron to make hash browns.  I wondered if this would work for tots?  I had to at least try!  You guys, it was so tasty!

Let’s waffle!

Get your tots out ahead of time so that they can thaw.  You’ll want them soft enough so that they can be squished in the waffle iron.

Start by preheating your waffle iron.  Each iron is different, but ours has a light that comes in when it’s ready to use.

Now cook your bacon over medium heat in a nonstick skillet until it’s browned, about 10 minutes. Scoop the pieces of bacon on a paper towel-lined plan and reserve about a tablespoon of the grease in the pan.  Put your skillet back on the heat.

Once your iron is ready to go, coat it liberally with cooking spray. Now spread half of the tots out on the waffle iron making sure they are touching each other.

Then put the top lid of the iron down and press.  This will make your waffle nice and crunchy.  Let that cook for about 3 minutes.

While the waffle (totffle?) is cooking, start on your eggs. Crack your eggs in the pan with the bacon grease.

I like my eggs with a runny egg but the whites completely done and slightly crispy edge.  To do this, cook on one side for about 4 minutes.  Then turn the heat to low and cover with a lid.

Open your waffle iron and check your first waffle.  If it’s crispy, it’s done.  If not, it may need another minute or two.  Carefully lift the waffle out of the iron with a couple of forks onto the plate you’ll be serving it on.  Now make your second waffle.

Look at how crispy it is!

Once the second waffle is done, put it on second place and top each one with an egg and divide the chopped bacon between them.

Top with ketchup or Sriracha if desired and enjoy!  The tot waffle is crisp on the outside but soft on the inside and the gooey egg adds some nice richness.  Yum!

This meal is perfect for a Sunday morning brunch or for an easy weeknight meal.

Ingredients

  • half bag tater tots (14 ounces)
  • 2 large eggs
  • 2 thick slices of bacon, cut into 1/2" squares
  • Ketchup or sriracha for topping

  7. Crack eggs in the pan with the bacon grease and cook on one side for about 4 minutes. Turn the heat to low and cover with a lid.
