Tahini Avocado Toasts
Ok guys, I know I may be the last person on the planet, but I’ve hopped on the avocado toast bandwagon. It’s super easy and has tons of versatility. Derek and I have actually had this a few times in the past week for a light dinner.
Because I can never get enough sesame flavor, I like a little tahini in my avocado mixture. Not only does it add a nice taste, it also makes the mixture creamier.
Let’s toast!
You’ll start by making your avocado mixture. Mash the avocado in a bowl with a fork. I like mine a little chunky, but get it to whatever texture you prefer.
Then squirt the lime juice in it and stir. The lime juice is multi-purpose. Not only does it add a nice acidity, but it also prevents the avocado from turning brown. Now stir in the tahini.
Now onto your eggs! If you want a lighter avocado toast, you can skip this step. I just love the fried egg on top and I feel like it adds more protein to make this a complete meal. Heat the oil in a small pan over medium heat (if you want to be more decadent, you could also use butter!). While that’s heating, toast your bread. I like whole wheat bread for this. The main thing to consider is that you want a sturdy bread that won’t collapse under the weight of the toppings and also won’t get too soggy.
Crack the eggs in the heated pan, being careful not to crack the yolk. II like my egg with crunchy edges but if you don’t, put the egg in a cold pan and then heat to medium. Let that cook for about 4 minutes.
While the egg is cooking, schmear your toast with the avocado mixture.
After the 4 minutes your egg whites should be almost cooked through. Turn the heat to low and cover with a lid for another 30 seconds or so. Take the lid off and remove the pan from the heat when the egg whites are cooked through. Pour the soy sauce over each egg and then gently place it on your toasts.
Sprinkle with the chopped onion and garnish with sesame seeds. This makes 2 toasts, which is enough for a light lunch or breakfast for 2 people or a hearty meal for one person.

- juice from half a medium lemon
- 1 teaspoon vegetable oil
- 2 large eggs
- 1/4 teaspoon soy sauce
- 1 tablespoon finely chopped onion
- sesame seeds for garnish
Instructions
