Passionfruit Yogurt Parfait
Today we’re heading back into passionfruit territory- I hope you guys love this flavor as much as I do! This fruit goes splendidly with other tropical flavors like pineapple and coconut and I feel like this trio just begs to be in a yogurt parfait. So here it is!
As Donkey from Shrek says, “everybody loves a parfait”!
You’ll start by toasting the coconut. This is not an absolutely necessary step, but I like the extra element of crunch and coco-nutty goodness it adds to this situation. Put the coconut flakes in a pan over medium heat and move them around until they are golden brown. Now take it off the heat immediately. Set that aside, while you get everything else ready.
The fruity component will be passionfruit (obviously), pineapple, some agave nectar and lime zest. The agave just sweetens things up a little bit and the lime zest adds a note of brightness. Now cut your passionfruit in half on a plate, and scoop the insides into a small bowl.
Add the chopped pineapple, agave nectar and lime zest to the bowl. Give it a gentle stir to combine all of the flavors.
Now you’re ready to assemble your parfait! Put half of the granola in the bottom of your mason jar or glass. I used my coconut pecan granola, but you can certainly use store-bought coconut granola if you’d prefer.
Now layer half of the yogurt on top of the granola and then put half of the fruit on top of that. Then add the rest of the granola, then the yogurt finishing with the last of the fruit mixture.
Now sprinkle with the toasted coconut.
Enjoy while pretending you’re in the tropics.
This makes 1 parfait. I made mine at night and then had it in the morning for breakfast and the granola was a little mushy but the flavor was still great. Another make ahead option is to have all of the components at the and assemble right before eating.

- 2 tablespoons coconut flakes
- 1/2 cup coconut granola
- 3/4 cup Greek yogurt
- 2 passionfruit
- 1/4 cup chopped pineapple
- 1 teaspoon agave nectar
- zest from half of a medium lime
Instructions

- Cut passionfruit in half on a plate, and scoop the insides into a small bowl. Add the chopped pineapple, agave nectar and lime zest to the bowl. Stir gently to combine.
- Put half of the granola in the bottom of a mason jar or glass. Layer half of the yogurt on top of the granola and then put half of the fruit on top of that.
- Repeat the layers and sprinkle with the toasted coconut.
