Coconut Sesame Overnight Oats

Ok, I’ve hopped on the overnight oats bandwagon.  I’m sure many of you got there before me, but I was reluctant to try it.  Now that I have, I wish I had sooner!  I didn’t really get the appeal.  Cold oatmeal, yuck!  I’m not sure why it never occurred to me that it could be heated up. Silly, silly Rachel.  What I love about overnight oats is that I can make a couple of servings on Sunday, pop them in the fridge and I have breakfast/lunch ready to go for the first few days of the week.  Letting the oats sit overnight means you can use old-fashioned or steel-cut oats and they still only take like a minute in the microwave.  I’m hooked!

Let’s get to it.

In two or three pint-sized mason jars, divide the oats.  I like a hearty serving of oatmeal, so I do two.  Divide a cup and a half of the milk equally between the jars.  Then add the extra milk to the jars you’ll be having last.  I discovered that the oats that sit longer soak up more milk, so you want a little extra in there so they aren’t too thick when heated up.

Now pour in the maple syrup.  Add the full amount if you like your oatmeal sweeter.  Stir it all together. Time for the tahini!  Plop equal amounts of tahini in each jar.  Sprinkle the coconut on top.  If you have toasted coconut flakes, even better!

Pop on the lids and store in the fridge until breakfast time.  When you’re ready to eat, take off the lid and microwave for about a minute.  Take it out and give it a good stir so that tahini is distributed throughout.  Enjoy straight out of the jar!

This oatmeal is hearty with a nutty flavor from the tahini and the maple syrup gives it just a tough of sweetness.  The coconut flakes help break up the texture to make it more interesting.

 

 

 

Coconut Tahini Overnight Oats

Ingredients

  • 1 1/2 cups old-fashioned oats
  • 1 1/2 cups + 2 tablespoons milk
  • 2 teaspoons tahini paste
  • 2-4 teaspoons maple syrup
  • 2 tablespoons coconut flakes

Instructions

  1. Divide oats between 2 or 3 jars.
  2. Divide 1 1/2 cup milk equally between jars.  Add the extra milk to the jars you'll be having last.  
  3. Pour in desired amount maple syrup and stir. Plop equal amounts of tahini in each jar.  Sprinkle coconut on top.  
  4. Pop on lids and store in the fridge until breakfast time.  When ready to eat, take off the lid and microwave for about a minute.  Take it out and give it a good stir and enjoy.
