Don’t Judge Me Mondays: Mermaid Prosecco

As I mentioned last week, I get inspiration from all the food TV Derek and I watch.  Recently I saw a show where they made flavored blue ice cubes with blue raspberry Italian ice and poured Prosecco over them to make Mermaid Prosecco. The color of this drink is beautiful, so I couldn’t wait to make it. I took that idea and tweaked the flavors more to my liking. 

Let’s get to it!

You’ll start by making your ice “cubes”.  I actually found some mermaid tail and clamshell shaped ice cube trays, so I used those.  Mix the pineapple juice and blue curaçao in a small pitcher.

You should be able to find blue curaçao in the liqueur section of any liquor store. Now pour that mixture into your ice cube trays and pop those in the freezer until they’re solid.

Once you have ice, you’re ready to make the cocktail! Put a few ice cubes into a clear coupe Champagne glass.

Now slowly pour over the Prosecco.

As the ice melts, the drink turns a lovely aqua color and the flavor of the pineapple juice melds with the Prosecco.  It’s a fun drink that’s easy to make!  Drink it while you daydream about being on a tropical beach somewhere with blue waters and white sand.

Mermaid Prosecco

Ingredients

  • 3/4 cup pineapple juice
  • 1/4 cup blue curaçao 
  • 24 ounces Prosecco

Instructions

  1. Mix the pineapple juice and blue curaçao in a small pitcher.
  2. Pour mixture into ice cube trays and freezer until solid.
  3. Put a few ice cubes in a clear coupe Champagne glass.
  4. Pour over the Prosecco slowly.
