Honey Lemon Goat Cheese Spread

As you all know, I am big fan of snack dinner.  I love putting some cheese, schmears or dips, meats, and other essentials together on a board and going to town with some crackers.
This means I’m always on the lookout at our local grocery stores for new things to add to a nibbles and sips situation.  Awhile back, I came across a honey goat cheese spread.  It was good, but I sort of felt like it was missing something.  I pondered what could be added if I were to make my own version and realized lemon would be just the thing!  I’m pretty happy with the result if I do say so myself.

Let’s get to it!

Start by setting out your goat cheese for at least 15 minutes to soften.  This will make it easer to blend everything together and help with a creamy texture.

Now add the goat cheese, honey, lemon zest, lemon juice (don’t forget to zest your lemon before juicing it!), and salt to a medium mixing bowl. 

Beat until it’s combined and fluffy, I used an electric hand mixer to save my wrists. 

Serve on crostini or your favorite crackers.

I love this spread because it could be easily taken in a sweet or savory direction.  You could smear it on shortbread cookies to take it sweet, or obviously on crackers for savory.  I also think it would be delicious on tart apple slices.

Ingredients

  • 8 ounces goat cheese
  • 2 tablespoons honey
  • zest and juice of 1 lemon
  • 1/4 teaspoon salt

Instructions

  1. Set out goat cheese for at least 15 minutes.
  2. Beat goat cheese, honey, lemon zest, lemon juice, and salt in a medium mixing bowl until combined and fluffy.
