Flavor of the Month Summary: Family

It feels good to be back to the blog and it was fun sharing some family recipes with you this month!

Here’s the rundown of what I made for the Flavor of the Month – Family:

Sue’s Crunchy Almond Chicken – This was one of my mom’s specialties when I was growing up and I still enjoy it.  Chicken pieces are coated in butter and a savory almond mixture.  No flour is used in the coating which helps make this dish low-carb.

 

Veggie Lasagna – When Derek and I first started dating, I was a vegetarian.  This lasagna was the first meal I made for him.  Looks like it sealed the deal! 😉  You won’t miss the meat in this hearty lasagna filled with cheese, spinach, and mushrooms.

 

Chicken Stir-fry – This is my go-to dish whenever I’m at a loss for what to make for dinner.  It’s an easy way to get protein and veggies all together and is also a great way to clear out whatever random produce we have in the fridge.

 

Galli – My grandma made this egg dish for my dad when he was growing up and he made it for me.  I’ve made some slight changes but the key is still mixing eggs with crushed up crackers to get a fluffy texture in my scramble.  It may sound strange, but it’s so yummy!
