Pimms Slushy

I think I mentioned last week how my friend Betsy went on a trip to Scotland and Iceland.  Well I stalked her and the friend she went with on Instagram every day to see all the great photos!  One day she did an instagram story of a canned Pimms drink.  Yum!  Does anyone know if we have those here, because I want them!  That got me thinking about how much I love a Pimms cup as a summer drink.  It’s not too sweet, has a unique flavor, and is very refreshing.  I also have a real fondness for Slurpees when the summer rolls around so I’ve been toying with combining these two drinks to make a cocktail slushy!

Let’s get to it!

This recipe makes a big batch in the blender so it’s a great cocktail option for your next BBQ or party.  Start by adding the ice, Pimms, and lemonade concentrate to your blender.

You should be able to find Pimms wherever you buy other liquors in your area.  If you’ve never had Pimms, it’s a gin-based liquor with hints of orange and other botanicals added (I see there is now a Blackberry Elderflower flavor that I need to get my hands on SOON!). Pop the top on the bender and blend a couple of minutes or until the ice is no longer in chunks.

Now fill your cocktail glass halfway with slushy and top off with the ginger ale.  I really like the fizzy slushy combo!

Give it a stir. Serve with a straw and garnish with a lemon or lime slice, if you’re so inclined, and enjoy!

This slushy is super refreshing for the hot days of summer and will make you feel like a kid again drinking your favorite Slurpee flavor!

Ingredients

  • 12 ounces frozen lemonade concentrate, thawed
  • 8 ounces Pimms
  • 5 cups ice
  • 48 ounces ginger ale
  • lemon or lime slices for garnish

Instructions

  1. Blend ice, Pimms, and lemonade concentrate a couple of minutes or until smooth.
  2. Fill cocktail glass halfway with slushy, top off with ginger ale, and stir.
  3. Serve with a straw and garnish with a lemon or lime slice.
