Lime Mint Simple Syrup

You may remember in my post about Notorious Pink Rosé a few weeks ago, I mentioned how pretty the bottle was.  I’ve been thinking of ways to use such a pretty bottle, especially since it comes with a pink glass stopper!  Derek came up with an excellent idea, make a cocktail mixer that I can just keep in the fridge for us to use.  Why didn’t I think of that!  I wanted to make something that was easy to make into cocktails without having a bunch of extra stuff on hand.  I decided on a mint and lime combination because it could be easily added to rum, gin, tequila and other spirits to easily make some tasty drinks!

Let’s get to it!

The hardest part about this syrup is juicing all the limes. :/  To make it easier, I leave the limes at room temp which makes them juicier.  Rolling them also helps with this and I use a citrus juicer like this one if I’m going to be doing a large amount.

To start, add your freshly squeezed lime juice, sugar, water, and mint leaves to a pan.

You should be able to find fresh mint in the produce section of your local grocery store with all the other herbs.

Muddle the mint to release their oils, this will pump up the mint flavor in the syrup.

Cook over medium heat for about five minutes or until the sugar is dissolved.

Pour the syrup through a fine mesh strainer and let it cool to room temp.  It’s a lovely light green color.

Once it’s cooled, pour into your favorite container.  I can tell you it fits perfectly into a wine bottle!

I added a few tablespoons to ice water for a refreshing limeade situation.  However, I am really excited to use it in cocktails!  Stay tuned Monday to see how I use it.

Lime Mint Simple Syrup

Ingredients

  • 2 cups fresh lime juice
  • 2 cups sugar
  • 1 package (.66 ozs.) fresh mint leaves
  • 1/2 cup water

Instructions

  1. Add lime juice, sugar, water, and mint leaves to a pan.  
  2. Muddle mint to release oils.  Cook over medium heat for 5 minutes or until sugar is dissolved.
  3. Pour through a fine mesh strainer and cool to room temp.  
  4. Pour into your favorite container and store in the fridge.
