Blueberry Goat Cheese

A few months ago I bought some goat cheese at Costco that had blueberries on it.  It was so yummy!  The goat cheese was tangy and paired perfectly with the juicy blueberries.  When I was planning what I wanted to share with you this month I knew I had to make my own!  I love the sweet and salty combo of fruit and cheese so I was so excited to have another version of that duo in my arsenal.

Let’s get to it!

You’ll start by making the blueberry mixture.  Add the blueberries, salt, and honey to a small saucepan and cook over medium heat for about 8 minutes or until it bubbles and the berries are soft.

Take it off the heat and stir in the fresh basil.  If you don’t like basil, you could swap it for mint. Mint is pretty potent, though, so you’ll only need half a teaspoon. The fresh herbs add a note of earthiness to the tangy goat cheese.

Now it needs to cool.  This will get it to thicken so it sticks to the goat cheese and also doesn’t make things a soggy mess.  The first time I made this it was to much liquid and it was a bit of a disaster. :/ Pour it into a bowl and put it in the fridge until it’s cool.  You can even do this a day ahead of when you’re going to make the rest of the recipe just make sure to cover the blueberries.

Take the blueberry mixture and the goat cheese out of the fridge.  Lay a large piece of plastic wrap down on the counter.  Spread about half of the blueberries onto it over a space just a little larger than the cheese log you’re using.

Now put the goat cheese log on top and cover with the rest of the blueberries, getting some on the ends too.

Roll it up in the plastic wrap and twist the ends.

Now put in the fridge for the flavors to meld and everything to firm up (this is another step you can do up to a day ahead of time).  I put mine in the fridge, watched an episode of The Great British Bake Off and then took it out. 🙂

When you’re ready to eat, take out the log half an hour before serving so that the cheese is soft enough to spread.

This is great spread on a baguette or other bread or on crackers.  It would also be great on a sandwich!

  • 1 8-ounce goat cheese log

  2. Take off the heat and stir in the fresh basil.
  3. Pour into a bowl and cool in the fridge.
  4. Take the blueberry mixture and the goat cheese out of the fridge.  Lay a large piece of plastic wrap down on the counter.
  5. Spread half of the blueberries onto the plastic wrap, slightly larger than the cheese log.  Put the goat cheese log on top and cover with the rest of the blueberries, making sure to also cover the ends.
  6. Put in the fridge for at least an hour.
  7. Take our half an hour before serving to soften.
