Praline Bacon

You may remember my post a few weeks ago about Screen Door, an amazing restaurant in Portland, OR.  One of the items I had for breakfast was the Praline Bacon and it was amazing!  It was the perfect blend of sweet, salty and slightly spicy and I knew I had to at least try making it at home.  I figured it had brown sugar and pecans and decided on Chipotle for the spice to add some smokiness to complement the bacon.  The results were amazing!

Let’s get to it!

Preheat your oven. You’re going to start by par-cooking the bacon.  For this recipe, I recommend using thick cut bacon.  The bacon needs to be in the oven long enough to cook and also to get the praline topping cooked.  Thin slices of bacon will cook too fast for this to work. Cover a cookie sheet with parchment paper and place the bacon slices on it with space in between them. Now cook the bacon on the middle rack for about 12 minutes, or until it’s starting to cook but not browned.

 

 

 

While the bacon is cooking, you’ll make the praline topping. Put the pecans, brown sugar, chipotle powder and butter in a food processor or blender.  You’ll blend it until the pecans are crumbled and the mixture clumps together.

Next take the bacon out of the oven and flip it with a fork or tongs.  

 

 

 

 

 

 

Press about 2 tablespoons of the praline mixture onto each slice of bacon and put the cookie sheet back in the oven.

 

 

 

 

 

Cook another 4-6 minutes, or until the topping is browned.  The praline is sweet and crunchy and just a delicious pairing with the bacon!

Yeeeessss!

This bacon is rich so 1-2 slices is plenty for a serving.  It would a tasty treat paired with French toast or pancakes.  If you have any topping left, it will keep in the fridge for a week.

Ingredients

  • 8 slices thick cut bacon
  • 1/2 cup brown sugar
  • 1 cup pecan halves
  • 1/8 teaspoon chipotle powder
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat oven to 400 degrees.
  2. Cover a cookie sheet with parchment paper and place the bacon slices on it with space in between them. Cook the bacon on the middle rack for about 12 minutes, or until it's starting to cook but not browned.
  3. While the bacon is cooking put the pecans, brown sugar, chipotle powder and butter in a food processor or blender. Blend it until the pecans are crumbled and the mixture clumps together.
  4. Take the bacon out of the oven and flip it with a fork or tongs. Press about 2 tablespoons of the praline mixture onto each slice of bacon and put the cookie sheet back in the oven. Cook another 4-6 minutes, or until the topping is browned.
  5. Any leftover topping will keep in the fridge for a week.
