Chocolate & Banana Quesadillas

Do you ever just crave something gooey and chocolatey?  Well I did last week!  I wanted something chocolate and did NOT want to wait for a batch of brownies or cookies.  I looked in the fridge and pantry to see what I could find to make this happen.  Nutella?  Good start!  Hmmm, tortillas.  What’s that saying, “Necessity is the mother of invention”?  Boom, dessert quesadillas were born!

These quesadillas are quick, easy and will surely satisfy your biggest chocolate cravings.

Let’s get to it!

I made a batch of these for game night and decided to accompany them with some rum whipped cream.  I know that rum goes well with bananas, so I figured this combo would also work. If you’re in a real “chocolate emergency”, you can certainly just get to making the quesadillas.  However, if you take a few extra minutes to make the whipped cream I promise you won’t be sorry!

Whip the heavy cream with a stand or hand mixer until it’s frothy.  Add the powdered sugar and whip on high until it’s stiff.  Now you’ll add the vanilla and rum and whip to combine.  If you don’t like rum,  you can leave it out and just add the vanilla.

Now onto the main event!

Lay out the tortillas and glop Nutella onto each of them.  Spread the Nutella to about half an inch from the edge all the way around.

Now cut the banana in half.  You’re going to cut each half length-wise into about 1/4 inch slices.  These long slices of banana will be less likely to fall out of the quesadilla than if you sliced it into coins.

Place the pieces of banana on half of each of the tortillas and fold them into half circles.

Now heat a nonstick skillet over medium heat and coat with cooking spray.  You can also cook the quesadillas on the grill.  If you decide to do that, brush the quesadillas with olive oil and put on a grill heated to medium.  Cook on each side for about 2 minutes or until golden.

 

Cut each quesadilla in half and serve with a dollop of the whipped cream.  You’ll probably have leftover whipped cream (there are worse problems to have), but I won’t judge you if you don’t. 😉

Quesadilla

2 medium flour tortillas

4 tablespoons Nutella

1 large ripe banana

Vegetable oil or cooking spray

 

Rum Whipped Cream

1 cup heavy whipping cream

1 tablespoon rum

1 teaspoon vanilla extract

2 tablespoons powdered sugar
