Hoisin Beef Lettuce Wraps

Happy Friday everyone!  As a reward for making it through the week, here is a recipe that is tasty carefree cooking for the weekend!  These lettuce wraps are one of our “go to” dinners because they can be made in less than 30 minutes, are delicious and don’t require much fuss.

Let’s get to the wraps!

Start by browning the ground beef with the onion over medium heat.

While that’s cooking, you can take the leaves off the head of lettuce.  IMG_3557You can use Romaine or Butter (also known as Bibb or “live” because the root is typically attached) lettuce.  The Romaine has more crunch, is longer and has a natural “trench” to hold the meat.  The Butter lettuce is small and more round, so you can create a little pouch for the meat.  Choose your own adventure here!  If you are serving this to kids, I recommend the Butter lettuce since it’s easier to hold in little hands. 🙂

Once the meat is cooked through (no pink), you’ll add the ginger, garlic, soy sauce and hoisin. Stir until everything is combined and turn off the heat.  Now mix in the chopped peanuts.

Now it’s time to eat!  Put the beef mixture in a bowl and let folks fill their own lettuce leaves. Serve with chopped peanuts and green onions to top.

Ingredients

  • 1 pounds lean ground beef
  • 1/2 medium yellow onion, finely diced
  • 2 teaspoons finely grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons low sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup chopped peanuts, plus more for topping
  • 2 green onions, sliced
  • 1 head Butter or Romaine lettuce

Instructions

  1. Brown the ground beef with the onion over medium heat. While that's cooking, take the leaves off the head of lettuce.
  2. Once the meat is cooked through (no pink), add the ginger, garlic, soy sauce and hoisin. Stir until everything is combined and turn off the heat. Mix in the chopped peanuts.
  3. Serve with chopped peanuts and green onions to top.
