Don’t Judge Me Mondays: Watermelon Cooler

Tomorrow is the first day of summer! I decided to make a cocktail that featured watermelon, which is the ultimate summer fruit in my humble opinion.

This drink is light, a little bit sweet, and so refreshing which is perfect for the summer.

Let’s make it!

First, put the watermelon and cucumber chunks in a food processor or blender.  Process for about 30 seconds or until it is mostly liquid.  We’re going to be straining it, so it’s ok if there are some chunks.

Now we’ll need to strain the liquid through a fine mesh strainer.  We’re going to strain it 3 times.   I know that seems like a lot, but we want to get most of the pulp out to use the juice for the cocktail.  You can see the difference after the 3rd time it’s been strained!

 

We’re ready to assemble our cocktail.

Fill a cocktail shaker one third of the way with ice.  Then pour in the watermelon and cucumber juice, squeeze of lime juice and gin.

Put on the top and shake, shake, shake for about 10 seconds.

Pour into your glass.  This recipe makes 2 small or 1 larger drink.  I would recommend using some cute stemmed glasses for this. The one I used is technically for champagne, but I like the way this cocktail looks in it.  A martini glass would also be a good choice.

  • 1/4 cucumber peeled and cut into chunks
  • juice of 1/2 of a lime
  • 3 ounces gin
  • additional cucumber and watermelon, for garnish
